It can be all too easy to get into a sandwich filling rut. This Creamy Beetroot Pate is a tasty change from the norm and a great way of getting another veggie in your lunch. Just pack into a sarnie with lots of salad for a tasty midday treat. Or have as a dip with some crudités and crackers or rice cakes.
The key is to use fresh beetroot and only blend or food process that alone. If you blend the soft cheese too it will become too loose and like a liquid. So mix the cheese and horseradish in by hand.
Fresh beetroot is such a great vegetable to include in our diets as it contains iron, fibre, vitamin C and magnesium. So often people don’t know what to do with the fresh, raw version and think pickled is the only way to go. But fresh beets are pretty versatile and using them like this will elevate your cheese sarnie!
Creamy Beetroot Pate
Ingredients
- 1 large fresh beetroot
- 150g soft cheese
- 2 teaspoons horseradish
Directions
- Step 1 Blitz the beetroot in a food processor or Nutribullet style blender until it is uniformly fine breadcrumb like in texture. You make need to scrape down during the blending if you are using a Nutribullet.
- Step 2 Now stir through the horseradish and soft cheese until thoroughly combined.
- Step 3 Serve.
