Simple Gnocchi

The debate over whether you can taste the difference between fresh pasta and dried rages on, but for many people making pasta seems like a difficult and long winded process requiring lots of equipment. But that’s not the case with this Simple Gnocchi, which is also a brilliant way of using up leftover potatoes too. And I would argue that in the case of gnocchi you can taste the difference. This is so light and soft where often the vacpac style bought packets are sometimes a little stodgy and heavy.

There are so many different methods of making gnocchi, some have egg, others don’t. Some insist on hot, oven baked potatoes while others suggest cold. I wanted something I could do to use up leftovers in a different way so I have used mashed potatoes from the day before here.

After removing from the fridge I did microwave them so they were warmer and then scrape them out of the bowl with a fork to break them up and get a little air in.

I have used some purple potatoes just because I think it looks fun and a bit different but white potatoes are just as good. These purple spuds are currently at a very reasonable price in Lidl in the kids veggie section. They are being branded as Dragon Egg potatoes but they are just as good for adults! Overall this dish comes in at around £1 for four servings.

 

Simple Gnocchi

Ingredients
  • 500g cooked potatoes mashed
  • 2 egg yolks
  • 100g plain flour
  • Salt and Pepper to season
  • Brown rice flour or fine semolina to roll out
Directions
  • Step 1 1. Warm the potato if it’s not already warm and re-mash, put through a ricer or fork through well so there is some air and no chunky bits of potato.
  • Step 2 2. Add the egg yolks and mix thoroughly.
  • Step 3 3. Sprinkle over the flour, salt and pepper and mix in well.
  • Step 4 4. You should have a fairly sticky dough. Take balls and work into sausage like strips on a worktop with a little brown rice flour or fine semolina. Cut the pieces into evenly sized pieces. Leave the finished ones to one side as you complete them.
  • Step 5 5. When all your gnocchi are cooked, boil a large pan of water. It may be you need to cook the gnocchi in batches.
  • Step 6 6. Drop the gnocchi into the boiling water, they will sink. In a couple of minutes you will see the them float up to the surface, which means they are cooked.
  • Step 7 7. Remove from the pan gently with a slotted spoon so they don’t break up.
  • Step 8 8. Serve with your favourite sauce or use in a gnocchi bake.
